Quinoa Quest
This quinoa platter contains:
- Vegetable quinoa pulao, sautéed paneer and salad
- Serves:1 person
- Cooking time: 25-30mins
Vegetable Quinoa Pulao:
Ingredients:-
- ¼ cup uncooked quinoa
- 1 tsp Olive oil or any cooking oil
- ½ tsp of jeera (cumin seeds)
- 1 tsp of finely chopped green chilli
- ¼ cup finely chopped onion
- ¼ cup boiled sweet corn
- ¼ cup chopped mixed bell peppers
- Salt for taste
Instructions:-
- Take ½ cup quinoa in a fine strainer and rinse well in running water (rinse quinoa nicely before cooking to remove bitter taste).
- Heat oil in a pressure cooker and add cumin seeds.
- Then add green chilli, onion, bell peppers and saute for about a min.
- Saute till the onions become translucent and then add boiled corn, mix it well.
- Add the quinoa. Mix very well and saute again for 1-2mins on low flame.
- Then add water. For 1/4 cup of quinoa 1.25 cups of water can be added. I added 1.5 cups water for a more fluffy and soft texture.
- Stir well and add salt as per taste.
- Cover the cooker with its lid and take 2-3 whistles on a medium flame till the quinoa seeds are cooked.
Paneer Saute:
Ingredients:-
- 50 grams of toned or low-fat paneer, cut in desired shape (paneer can be replaced with tofu, lean chicken or fish)
- Olive oil or any cooking oil for drizzling
- 1 tbsp of tomato puree
- ½ tsp cumin seeds
- ¼ tsp garam masala
- ¼ tsp chilli powder
- Pinch of turmeric powder
- 1 tsp minced garlic
- Salt to taste
Instructions:-
- Cut the paneer and drain out the water completely.
- In a bowl, mix salt, turmeric powder, garam masala, red chilli powder and tomato puree.
- Apply marinade evenly on both sides of the paneer pieces and keep aside for 15 minutes.
- In a pan, arrange marinated paneer slices and grill/saute on a medium heat, drizzle oil, and cook until golden colour on both the sides.
Salad:
Ingredients:-
- Take vegetables of your choice and availability (I took broccoli florets,carrots, mushrooms)
- 1 tsp of minced garlic
- 1/2 tsp of olive oil
- Salt and pepper as per taste
Instructions:-
- Take oil in a pan, then add all the vegetables with garlic.
- Saute it for 4-5 mins till they are soft yet crunchy, add salt n pepper and relish your salad.
- I have also added some raw lettuce as a side in my salad.
